Viniferm BY drojdie selectionata capabila sa fermenteze in conditii dificile de temperatura si carente in nutrienti. Respecta caracterul varietal al strugurilor, recomandata pentru vin alb, roze, rosu, spumante si pentru reactivarea fermentatiilor. Rezistenta la alcool pana la 17% vol. Rezistenta la temperaturi scazute pana la 10 ºC.

- Tulpina viguroasa, cu faza de latenta scurta.
- Toleranta pana la 17% vol.
- Caracter Killer: neutru.
- Exigenta nutritionala: o buna activitate fermentativa in medii lipsite de nutrienti. Cu toate acestea, se recomanda corectia azotului din must pentru a minimaliza riscul unei cresteri a aciditatii volatile si aparitia radicalilor sulfurati.
- Temperatura de lucru: 10-25 ºC.
- Randament alcoolic ridicat.
- Buna productie de glicerol.
