Refermentare.
Producerea vinurilor spumante vas (metoda Charmat).
MOD DE AC?IUNE
Viteza fermentare – înalt?.
Toleran?? alcool – pân? la 15% vol/alcool.
Temperatura optim? de fermentare: 16 – 30°C.
Rezisten?a la temperaturi înalte – bun?.
Pentru optimizarea rezultatelor este necesar? utilizarea nutrien?ilor de fermenta?ie.
MOD DE UTILIZARE
Dizolva?i drojdia uscat? în 10 p?r?i de ap? cald? curat? sau solu?ie zaharoas? la refermentare (35-40°C). Amesteca?i bine.
2) L?sa?i suspensia pentru 20 minute ?i apoi amesteca?i din nou.
3) Ad?uga?i suspensia În must la începutul fazei de umplere a vasului unde se va efectua fermentarea sau turna?i treptat peste suspensie must/vin pentru reducerea temperaturii. La încorporarea total?, diferen?a de temperatur? între suspensie ?i must nu trebuie s? dep??easc? 10°C.
4) Efectua?i omogenizarea produsului prin pompare în circuit sau prin umplerea treptat? a vasului
20-40 g/100L. Doza maxim? recomandat? în cazul strugurilor afecta?i de mucegai ?i condi?ii microbiologice nefavorabile pentru fermentare.
Refermentare: 40 g/100L.
